Chef Nico Romo of Fish Restaurant
Chef Nico Romo believes that the key to a good restaurant is to have a solid team and always stay true to your standards. His arrival at Patrick Properties Hospitality Group has ushered in a sort of revival, a golden age at Fish Restaurant, and we hope he’s here to stay.
Romo, a native land of Lyon, France, trained at the Helene Boucher Culinary Art School in Venissieux and graduated at the young age of 19. Romo honed his gift in fine restaurants across the southeast, and in 2007, Patrick Properties brought him to Charleston to head their culinary program.
Since his arrival, Fish has become one of the best destinations for lunch or dinner on the peninsula. The menu is hard to categorize—a unique blend of European and Asian, at times. With local seasonal ingredients, rest assured it is always fresh and delicious. I can often be found there for their amazing $10 lunch specials. Thank goodness they’re healthy because they’re definitely addictive!
Romo was awarded the coveted title Master Chef of France in 2011. He is the youngest ever to receive the prestigious title (he is now just 30!) and the only Master Chef in South Carolina! That same year, Romo prepared his first dinner at the James Beard House in New York City, and he hopes to return annually.
But he’s not resting on his laurels. This year, Romo will receive another feather in his cap from the Association of Master Chefs of France in July.
He was also was named one of the Charleston Regional Business Journal’s 40 Under 40, a professional award for success and community involvement by locals under 40 years old.
Success is born out of his tremendous team. The support that Patrick Properties gives him allows him the freedom to do his job, and do it well. Romo credits CEO Randall Goldman, General Manager Jodie Battles (“she’s my left hand!”), Manager Evan Powell and the entire kitchen and wait staff for Fish’s success. “Everybody has grown so much in the company… It’s a really good team,” says Romo.
