  In December, Lata staffed the kitchen of George Mendes at Aldea–a Portugese-Mediterranean establishment known for innovation combos in his paella, consomme, and duck specialties.  Lata served up four courses of Lowcountry flair, and now it’s the New York chef’s turn to wow southern palates.
